Eighteen or twenty years ago, I was into high protein, high fat, low carbohydrate diets, courtesy of the original Atkins Diet Revolution and, to an even greater extent, Stillman’s Quick Weight Loss Diet (which I must admit I still prefer to Atkins but that’s merely personal taste). At the time, every aisle was loaded with labels proclaiming Low Fat or Reduced Fat. I didn’t care about fat and sought much different information. Unfortunately, low fat was “in” and I felt alone and abandoned.

With a certain sense of resentment, I tracked down the carbohydrate costs of a wide variety of food, keeping a sharp eye on ingredients, calorie levels, and nutritional values. Certain items were strangely emblazoned with banners announcing low fat: pasta sauce, potato chips, candy bars, and ice cream. I was puzzled: how could certain foods, full of fat to their very core, be low fat? How could all the fat be removed and there be anything left?

I became fascinated with certain labels. Have you ever, for example, read the labels on those flavored coffee creamers? Zero fat. Zero carbohydrates. Zero protein. Zero calories. How can anything we put in our mouths have zero calories? A negligible amount, maybe, but absolute zero? What is in that stuff? Or is it virtual food, existing only in our mind’s eye as a kind of edible hologram?

Mercifully, the low fat craze died its natural death. Atkins and similar regimens took over and the low fat labels were reprinted (corporate recycling at its finest) to read Low Carb. Suddenly, everywhere you looked, there were foods recast as low carb – again with the pasta sauce, the potato chips, the candy bars, and the ice cream.

I was curious. Had the manufacturers taken out all those carbs and put the fat back in? Where did those carbs go? Are there vast dumpsites in the desert where unwanted carbs are buried – next to worn tires, plastic bags, and nuclear waste?

Once more, I wonder: what is left in those boxes, cans, and jars? Why am I paying .19 per ounce for something that really isn’t anything?

Then I started to figure it out (sometimes I’m a little slow). The food hadn’t really changed at all, just the packaging. Food labels are like those ubiquitous Internet sales letters. They trumpet headlines that catch our interest because they are in synch with our desires and goals. Is that accidental? Of course not. Highly paid copywriters choose their headlines with great care, buying into the national “obsession o’ the day”, floating on the coattails of the latest fad.

Many of us are so desperate to control our weight that we buy into the promises like the unaware followers we are: bleating sheep heading for a precipice with no thought of questioning our leaders or striking out in a different direction.

The unspoken secret is that the label doesn’t matter. If we want to lose weight, we don’t eat pasta sauce, potato chips, candy bars, or ice cream. Period. No matter what the package says. Deep in our psyche, we know what we can eat (very little) and what we can’t (a whole bunch). Allowing ourselves to be misled is only a fashionably acceptable way to fool ourselves, and we know it. We buy into the hype because we want, so badly, to believe. We want to think that we are doing the right thing, that we’re really trying, that our motivation is pure.

Our weaknesses are being exploited by the packagers and the super store con men. Our ambivalence, and the overwhelming need to avoid the very real discomfort of effective dieting, invests the misguidance of food labels with an illusion of truth.

Like our dimwitted ovine cousins, we, too, are eventually fleeced.

A Tribute to a Paperweight Maker

A good friend passed away recently. We had none each other for many years, we had laughed and shaken each others hands and greeted each other with such pleasure, and a feeling of true welcome. He had always been there, he had two sons the same as me, and about the same ages, in fact we were the same age, he shared his family and his sons and daughters in law, and his grandson with us, yet besides my name and the many ‘ganbei’s’ over the years at the many lavish evening meals in the very best food halls in Boshan. Our talks were through my agent, or through our smiles and gestures. Yes he and his family lived and built up our paperweight factory with us in China.

When we first started trading it had to be through my very good friend who lived in Qingdao and worked for the Chinese Trading Company, who sold his items through their warehouse. Qingdao itself always made feel me at ease, due to my good hostess. And the good hotels, the seaside, and the Chinese similarity to my nearest home town Weston-super-mare in Somerset, both are tourist areas, and yes it was the same Qingdao as in the recent Olympic Games in China, but in those days it had great character still, and the streets were very narrow and congested, totally unrecognisable in the Games.

Until the Expressway was built the only real communication between Boshan and Qingdao was by train, built in 1904 to link the industrial complex and the port. The route by both rail or by expressway is quite long, but interesting with the many types of agriculture, the people working in the fields, the small villages, and the earth banked greenhouses. The area is very different to the paddy fields of Jiangsu, where our other glass items are made, as this is Corn Country, the cobs stung together and hanging from every available building, and the sides of the expressway make ideal drying surfaces for drying the loose corn on mats, the same sea grass mats as we use to sun ourselves on the beaches. My friend’s family is a farming family, like many industries the first small factory was funded by the local farming community. My friend knew of my love for fresh sweet corn, so there was always a constant supply of fresh cobs cooking around the kilns for the workers and myself. He knew I loved grapes, so there was always bowls of fresh grapes from his lands, being a farmer he had been allowed to have his two sons. The craftsmen were equal in men and women, while the packers and loaders for the containers were all women, always laughing and smiling, this was a happy community, each artisan expert in there own handed down art of paperweight and large glass item manufacture. The amazing way in which such artistry is carried out, if totally by hand with the use of pins, needles, the long rods going backward and forward to the kiln until the red glowing article is perfect, then the large cutters to extricate the paperweight, the article then carefully taken to the cooling trays, before being checked for cooling cracks or any imperfections, then the sanding of the base, the polishing, then the packing, all by hand.

It is difficult to explain the feeling of seeing the first of the new designs, and new colours and colour variations, after the items have cooled, yet I have done nothing other than have my companion draw up the design and the colour variation, each fountain, coloured droplet.

I can still remember the first dolphin paperweight, very small at first, as we had tried to do the insertion so many time and it had either fractured in cooling or came out malformed, and the very first fish paperweight, then there was no stopping us now, crabs, lobsters, turtles, then teddies and dogs, you name it we did it.
Then there was the introduction of the gold leaf into the paperweights, gold had historically been used to create the reds and pinks, but we were doing a lot of business with the Arab Emirates at the time, and they wanted gold in their paperweights to be sold in their tourist market, as did our customers in Kuwait and in Malta. All the paperwork and the duty to be paid, as at the time the leaf had to be imported from Japan, and in those days importation was only allowed for items for re-export.

When we first started importing the paperweights there were severe quotas in place, with lots of forms and records to be kept, and you literally allocated you quota to your very best customers. At this time there were very few western designs, and before my friend set up, there was only two very old and famous factories, who made the wonderful glass flower paperweights, originally made for the Emperors and later during the 1920’s and 1930’s to collectors in the fashionable Shanghai playground for the rich, along with the fabulous beads and blue glass items, similar to those excavated from the area, made in the 5th century BC, although glass making is more commonly dated from 700 years ago in Boshan.

My friend would arrange for us to ‘go up the mountain’ to ‘the small factory’ which makes the traditional moulded glass bottles, jars and plaques, This was one of my favourite trips out passing through the villages with their agricultural daily life, as it must have been in our countryside prior to our Industrial Revolution, the wonderful views, the ancient terraces, there since the earliest civilisations. The Cable Cars taking originally worshipers to the Monastery, now a Chinese Tourists to the World Heritage Site, the remains of the ancient aqueduct, believed to be as old as old as the Roman Aqueducts to feed the terraces from the mountain. The people in the shallow river bed, sorting the smooth pebbles, ready for packing in the bags and glass plastic tubs to be sold in Garden Centres and Interiors Shops all over the world, and the large stones to be hand carted for building. We are climbing more and more and then we are there, the moulds are made by hand and the new plaques are cast and costed, it is high up here so even in the sun it is cold, and the factory is frozen in during the winter, so production times are limited. We are given some biscuits, as this all they have for Westerners, then its back down the mountain and back in time to freshen up and then to another famous eating house for another meal and the Qindao Beer and the Baijiu in the little toasting glasses, which is the famous very strong white liquor. The whole family are there along with relations who do everything from being drivers and arranging the shipping, and a good time is had by all, and I have to ‘ganbei’ with every person except the children, so I am glad to be taxied back to my hotel along with o big box of bananas and grapes.

We set out next morning to the ‘Glass Animal Paperweight Factory’, which is in the countryside in a different direction from the day before, through the ancient corn villages, corn hanging everywhere as we pass through all the little villages, in the middle of nowhere, we stop at one of the villages, I can never remember the right village, there are Mules and belt driven tractors pulling carts over laden with corn cobs and huge piles of the stalks for animal fodder. We pull up outside some big wooden doors, the director explains that all the workers are out gathering the crops, but has his cook and a couple of his oldest and most experienced makers are there for us, this happens this time of year every time we visit. The factory also makes our glass fruits, grapes and vegetables as well, the very first time we visited I was very wary of the meal offered, but the chef, no white hat here, cooks up a wonderful amount of vegetarian cooked dishes for me and my companions, we are joined by the head of the village cooperative of farmers who financed the factory and the Qingdao Beer is flowing for everybody except my friends son who has given over the day to drive us, as they are old friends. In this factory the workers are all farmers, but everything is made by hand, again the level of skill is fantastic, the fusing of colours in the carrots, the grapes, and the detail in the pineapples and mini fruits.

We return back to my friends factory, as it is our last night we leave tomorrow, so we check all the costings and organise the order of production, the packing, and order the silk lined display boxes. We have our last night meal in the most expensive and ‘Latest Night Club’ we are greeted by beautiful hostesses in the Traditional Dress, and taken to our table, and the cabaret stats with a group of western dressed young ladies singing live to backing tracks of popular western songs, followed by a band of musicians playing a mixture of Western and Chinese Instruments, the result was very good, and so another good visit is over, my host has looked after us so well again, how I shall miss him.

If Brian Westbrook’s vision isn’t too fuzzy, and the fog engulfing his consciousness not too dense, the concussed Eagles running back might want to thank Joseph Mason Reeves.

Reeves too was a football player, a genus of athlete noteworthy for its tendency to be both headstrong and head-weak. His teammates called him “Bull”, though frequently he was too dazed to hear them.

An undersized tackle on Navy’s 1893 team, Reeves’ unpleasant duty was to plow headfirst into the flying wedges opposing offenses ran with a deadly – literally, on occasion — efficiency.

In retrospect, “headfirst” was probably an unwise strategy, considering that football heads like Reeves’ were not yet helmeted. In what was the sport’s infancy, players actually believed they could protect their heads simply by growing their hair long.

Few got haircuts in-season. Many got concussions.

Reeves, who like Ronald Reagan was born in Tampico, IL, must have had thin hair. He was knocked out so frequently that late in that 1893 season a Naval Academy physician warned him the next could result in death or “instant insanity.”

While deaths weren’t uncommon in a football era so brutally violent the sport would nearly kill itself, insanity was something else. The prospect of a nutty Naval officer at the helm of an American battleship, the first of which was then under construction at U.S. navy yards, was not something the academy superintendent could condone.

So even though the fourth annual meeting with Army was next on Navy’s schedule, Capt. Robert L. Phythian summoned the 21-year-old to his office. “Reeves, my good man,” he told the senior, “I cannot in good conscience allow you to play in the upcoming game with Army.”

But Bull Reeves, who though he failed to recognize the peril of persistent head injuries did foresee the value of aircraft carriers, possessed the resourcefulness of a future officer. The future admiral sought out an Annapolis cobbler and asked him to create a head-protector out of moleskin.

The result looked like something Attila the Hun might have worn to a pillaging party – as conical as it was comical. Even so, the odd-looking device satisfied Phythian. Reeves starred in a 6-4 Navy victory and the football helmet, though it wouldn’t become mandatory for nearly a half-century, was born.

In the decades since Reeves preserved his playing status and presumably his sanity, helmets have undergone constant and considerable changes. Physicians, trainers, engineers, pilots and coaches all have tried to perfect them. Straps were added, then padding. In the late 1940s, the switch began from leather to molded plastic. Facemasks were soon incorporated and later air-cushioning devices.

Today’s state-of-the-art helmets are as shiny, sleek and handsome as sports cars. They cost hundreds of dollars apiece. They are effective marketing devices, with tens of thousands sold annually not just to teams, but to collectors and obsessive fans as well.

And yet, as is illustrated by the problems Philadelphia’s Westbrook, Washington’s Clinton Portis and at least a dozen other players have endured this season, head injuries continue to be a major headache for the NFL.

By the league’s own estimate, there are 120 to 130 concussions a season – a number a recent Associated Press survey suggests may be vastly underreported. “Guys today are a lot bigger, a lot faster than they used to be,” said Sam Huff, the Redskins broadcaster and former linebacker. “The game is violent and it’s always going to be.”

That rationale doesn’t help much in a hyper-litigious era. So Commissioner Roger Goodell ruled recently that no player suffering a concussion will be permitted to return to action. Players are also under increasing pressure to sit out the game after their injury.

\”Once removed for the duration of a practice or game,” Goodell’s memo reads, “the player should not be considered for return-to-football activities until he is fully asymptotic, both at rest and after exertion, has a normal neurological examination, normal neuropsychological testing, and has been cleared to return by both his team physician(s) and the independent neurological consultant.\”

The conundrum football faces in this health-conscious age cuts to the very nature of the sport: How do you remove violent impacts from a sport of violent impacts? With better helmets? Tougher penalties? Stricter medical policies?

So far, none of those options has done much to quell the epidemic. Baseball, if it wanted to, could merely legislate away its most violent aspect, beanballs. Basketball has been successful policing stray elbows and in-the-lane muggings.

Hockey is probably closest to football among the four major sports in its proclivity for head-jarring hits, but on the ice they don’t take place nearly as regularly.

All that the NFL knows at this early stage of what is becoming, for the league anyway, an increasingly unpleasant topic, is that something must be done.

In addition to Goodell’s new edict, a Player Advisory Forum, headed by Tony Dungy, was formed. Its purpose is to get input on hot-button issues from players around the league and feed it to Commissioner Roger Goodell. It already has asked helmet manufacturers to come up with a safer design. What happens after that is anyone’s guess. \”Players continue to be an invaluable resource in providing direction and insight into a wide range of programs and policies,\” the commissioner said in the release announcing the formation of the committee. \”Tony\’s experience and expertise in working with players makes him an ideal leader.”

The committee almost certainly will discover what a recent survey by the University of Michigan’s Institute of Social Research found. That study revealed that 6.1 percent of the players responding were suffering from Alzheimer’s disease, dementia or some other memory disorder. That’s five times the national average for men their age.

The numbers were even worse for younger NFL alumni. Those between 30 and 49 reported suffering from those infirmities at a rate 19 times the American average.

A subsequent Associated Press survey of 160 current NFL players revealed that half had suffered serious head injuries – and that many had hidden that fact from their teams.

Much of the blame, of course, can be attributed to the peculiar physics of football. Large, physically gifted linebackers and defensive backs hurl themselves like missiles at each other. Helmets, designed to protect, often become dangerous projectiles as players ram them into backs, pelvises and occasionally other heads.

Less noticeable, but equally insidious, even-larger linemen regularly butt heads in the steel-cage battles of the pits.

And running backs and receivers diving for extra yards frequently get kneed in the head – as Westbrook did – by onrushing defenders. Not surprisingly, these repetitive convulsive acts can have a dangerous cumulative effect.

According to a recent New Yorker magazine article, researchers believe the majority of these stricken former players have a neurological disorder called CTE (Chronic Traumatic Encephalopathy), the result of repeated brain trauma.

Autopsies uncovered various degrees of CTE, the magazine said, in the brains of Steelers Hall of Fame center Mike Webster, who was a homeless recluse when he died; Andre Waters, the hard-hitting Eagles safety who, severely depressed, killed himself with a bullet to the head, and Justin Strzelczyk, the one time Steelers lineman who died when he drove his car the wrong way on a freeway and slammed into a truck at 90 mph.

If football players retired after their first serious head injury, experts contend they’d likely experience fewer problems later in life. But, unfortunately, there wouldn’t be many players left to form a league.

Virtually every NFL player, at some point in his career, has been knocked unconscious during a game or practice. Far too many don’t reveal the depth of their problem because they fear losing their position. Dungy, for example, told a radio interviewer that he had done exactly that. And after Westbrook suffered a concussion earlier in the season, he sat out two games, returned, and was concussed again.

The New York Times reported that Pittsburgh safety Troy Polamalu had suffered six documented concussions since high school. The total was three for Steelers QB Ben Roethligsberger, who missed a game recently after being knocked out.

How many will end up like former Steelers Webster and Strzelczyk?

“It’s not that you’ve just lost cognitive skills,” Douglas H. Smith, a professor of Neurology at the University of Pennsylvania’s Center for Brian Injury and Repair, told The Philadelphia Inquirer, “but you’ve also increased the chances of having a worse problem later in life.” Right now, the NFL can’t think of a worse problem.

If the deficit is larger, you may need to downsize your vehicle or living arrangements. Additionally, consider if you need to add new categories. Some areas that are often overlooked are debt reduction, emergency savings funds, and retirement savings. An emergency fund ensures there is an adequate amount available to cover unforeseen events (car emergency, etc), should it arise. This will eliminate the need for using credit which can quickly damage your budget.

There are several advantages to sticking to your budget. Firstly, most people have set financial goals that they would like to reach in the future. Sometimes it may be a trip, a brand new car, or a college education. A budget can help people save money to make these goals a reality. Additionally, many people are crushed under heavy consumer debt. Without a disciplined pattern of spending, it is virtually impossible to make much headway in reducing debt. For instance, some people use the same agent for multiple cars, and others combine their cars and house. Always keep in mind that a dollar here and there really begins to add up. Avoid the temptation of thinking that changing your spending habits wouldnít save that much money.

Therefore, adequate funds have not been set aside for presents, food, parties, etc. These items should be factored in and saved for throughout the year. Finally, many people factor in transportation and accommodations for vacations in their budget, however they underestimate money needed for food, entertainment, and spending money. Keep in mind that all the resorts and tourists areas are double or triple what you would normally pay. With a little planning, youíll be on your way to saving more money than you ever thought possible!

Easy Money-Saving Changes One of the most obvious and easy ways to save some extra cash is to change some of the way you use products and items in your everyday life. The key is to make minor changes. For instance, always buy the cheapest hand soap you can find. The quality doesnít necessarily go up with the price and you can use it in place of ëbath soap.í Always use the whole product. Turn bottles upside down and drain to get the last bit from them. Tear open sugar and flour sacks to get everything; squeeze or cut open tubes to use it all before running out to buy more. Youíll be surprised at how much there really is left!

Also, never use more than you need. Just because it says on the box that you need a full cup, doesnít mean that you really do it need it. Half a measure of laundry detergent and a half teaspoon of dish soap are examples of what are usually enough, rather than what the manufacturer says.

To save some cash, you can use some of the things in your house in some unique ways. Instead of spending lots of money on the fancy floor cleaners, try using ammonia. It does a great job, and you can use plain water in between times. If your furniture needs some polishing, mix equal parts of white vinegar and vegetable oil and rub on the furniture. Buff with a cloth until it shines.

For a freezer bag, use empty chip bags and close with masking taps. Also try a bowl with a lid, such as a margarine tub.

If your skin is feeling a little dry, there are several substitutes for expensive lotion. Petroleum jelly rubbed into your hands at night after a warm water soak, mayonnaise (rinse w/ cold water after), or any other oil based food. Just be sure to put it on immediately after your hands have been in water.
