Eventually a lot of chefs, cooks and foodies signed up and started exchanging recipes. It is possible now to share recipes, techniques and information with people around the world. It then follows that Food Social Networking will be the next best thing. Grocery shoppers will be dependent on social networking more than advertising to help them to decide on where to buy and where to eat. A kind of social currency, as the blogosphere has anchored itself as a major word-of-mouth avenue. Gourmet and gastronomy will no longer be an exclusive club for foodies.

Franken food – With the latest technologies in bioengineering, it is now possible to come closer to that utopia of the perfect food supply. We should be expecting more consistent food crops, and therefore better quality ingredients. But this has its own sets of controversies. On the other end of the spectrum, the nutritional aspect of food production and consumption will definitely be looked at more closely.

Green Advocacy – Consumers are now more than ever aware of the consequences for irresponsible production practices. Tree huggers were right all along. Now the rest of us are catching up. We now look for ingredients, products, restaurants and food and beverage manufacturing that translate into environmental responsibility, efficiency and cost management. It is expected the demand for produce that are treated with little or no chemicals, safe manufacturing practices and sustainable production will increase. More emphasis will be put on local produce which do not require huge transportation expenses. With this, we could expect the rise of celebrity farmers making headway in local production, as well as the interest to have a home garden. We would now know more about seasonality, about the importance freshness. There will be more restaurants trying to get ‘green certified’ to attract the growing number of clientele who are environmentally conscious.

 

Healthy convenience – Convenience stores will be packing more healthy options on its menus. Additional channels of distribution will be evident as more and more are adopting the grab-and-go lifestyle and looking for healthy alternatives. Quick lunches that pack the nutritional punch will be readily available, in environmentally safe packaging! Copy cat competition will have independent and chain restaurants to adopt new menu items that have been top sellers at competitors. Donut shops are now going into the smoothie business. The smoothie bar will now be incorporating gourmet burgers. Cupcakes will be popping up ridiculously in every nook and corner. Soon there will be so much noise, differentiation will muddle out the true identity of the dining experience. Soon the phrase ‘jack-of-all-trades, master-of-none’ will prosper.

Back to simplicity – With the recession affecting the globe, what did we discover? Simple sells. Chefs and restaurants now are capitalizing on the power of classic combinations and pure ingredients. Mad Men has tickled the Baby Boomer’s fancy, so expect a return to Mama’s home cooking. ‘Rustic’ will replace ‘molecular gastronomy’ as the new buzzword. Foodservice operators have been having success with retro menu items—things that people grew up with. From a culinary perspective, however, many operators have been able to add a unique twist to these timeless favorites.

The Offal Truth – In order to control food costs, savvy chefs and restaurateurs are looking at these odd parts to offset the expensive steaks and chops. Expect specials on tongue and oxtail along with beef and pork cheeks, chicken gizzards, tripe, and other innards and odd parts. Oxtail Ravioli? Beef Cheek in red wine reduction?

Tart it up – Restaurateurs are noticing a trend….we need more zing, more pop to what we eat. By next year, restaurant menus will be featuring a balance in sour, salty and sweet sensations, in the form of pickled vegetables, the rise of Ethnic cooking and exotic flavors. Sugar and spice and everything nice will get it’s second serving in the spotlight. Extreme flavors will gain ground. Food and Water Safety After a Flood

   Floods are the most frequent natural hazard in North America and we seem to have had to endure quite a number of them recently.
   A devastating flood can occur at any time of the year and are most often caused by heavy rainfall, rapid melting of a thick snow pack, ice jams, or more rarely, the failure of a natural or man-made dam.
   One of the major issues that will affect everyone living in an area that has been flooded is that of food and water safety.

Food safety after a flood: 
          If in doubt – Throw it out!

   You must inspect food that has come anywhere near flood water very, very carefully. Floodwaters may carry contaminated mud, chemical waste, petroleum products and even raw sewage, which can make storm-damaged foods unsafe to eat.
   Even the slightest contact with floodwater can lead to contamination. There is a simple, basic rule: all foods that have touched floodwater should be dispose of.  This includes all fresh produce, meat, poultry, fish, and eggs. Food in glass jars, including all unopened jars. Discard all foods in bags and all opened containers and packages.

   The only exception to this rule would be food in sealed in undamaged metal cans. These are safe for use, as long as you carefully clean and disinfect the cans before opening. 
   This means you must remove the labels and thoroughly wash them with a scrub brush in a strong detergent solution containing chlorine bleach and then rinse well in clear water. The bleach solution should be one half-cup of bleach to one gallon of water. You may wish to wear rubber gloves to protect your hands during this process. 

Being Prepared: 

   This brings up the issue of being prepared for a disaster. Nothing will help you and your family through any emergency situation as will being prepared for it.
   It may be up to three days before Emergency Services are up and running in your area. Having an emergency preparedness kit, stored high and dry, can literally be a lifesaver.
   A supply of food, drinking water and some additional gear such as Light sticks, Dynamo FM Radio, Flashlight, Hygiene Kit, Waterproof Matches, Emergency Candles, Sanitation Kit and First Aid supplies will be priceless to you and your family.  

Cookware and Cooking Utensils: 

   If your cookware and kitchen utensils have come into contact with floodwater, they will require special treatment. 
   Take apart any item that can be cleaned in pieces. If possible, remove handles from pans.
   Wash all china, glass dishes, cups and pots and pans that have been in contact with floodwaters.  Use hot soapy water and a brush to remove dirt. Rinse and then place them in a sanitizing bleach solution for at least 10 minutes and then rinse well in clean water. The bleach solution should be one half-cup of bleach to one gallon of water.
   Disinfect silverware, metal utensils, and pots and pans by boiling in clean water for 10 minutes.    Chlorine bleach should not be used in this case because it reacts with many metals and causes them to darken. Throw away dishes with cracks as well as soft, porous plastic or wood items saturated by floodwater, since they cannot be sanitized. These include baby bottles, nipples and pacifiers. They cannot be safely disinfected. 

Potable Water: 
           Water; water everywhere and not a drop to drink! 

   After a flood, you should assume that all water sources are contaminated until they have been proven safe. 
   Boil all rain and tap water and water from containers you’re not completely sure about. Use only bottled, boiled, or treated water for drinking, cooking or preparing food, washing dishes, cleaning, brushing your teeth, washing your hands, making ice, and bathing until your water supply is tested and found safe.
   There are also a few excellent Water Filtration Bottles and water filters on the market that are very effective at producing clean drinking water from almost any water source. These are the same systems that were used by the US military during the Katrina disaster. 
   If you use a private well for your water supply, be sure to have the water tested before you resume use. Use an alcohol-based hand sanitizer to wash your hands if you have a limited supply of clean water. 

Floodwater: 

   Avoid contact with floodwater if at all possible, but if you find yourself wading into the floodwater during or after the disaster, remember that you will be in contact with many harmful contaminants that can make you sick. Always wash after contact with floodwater.

PETITE QUICHES
This recipe is from a 1970s Kraft Foods grocery store give-away flier.

Pastry for a 9-inch pastry shell
2/3 cup half & half cream
2 eggs, slightly beaten
1/4 tsp salt
dash of pepper
4-ozs KRAFT Natural Swiss Cheese Slices, chopped
1 tbsp flour
4 crisply cooked bacon slices, crumbled

Line 24 miniature muffin cups with the pastry; set aside.

Combine half and half, eggs, and seasonings; mix well. Toss cheese with the flour; add cheese and bacon to the mixture. Fill muffin shells two-thirds full with the egg mixture. Bake at 325 degrees 30 to 35 minutes or until lightly browned.

Variation: Line bottom and 1-inch up the sides of an 8-inch square pan with the pastry. Pour cheese and egg mixture into pastry shell. Bake at 325 degrees for 40 to 45 minutes or until lightly browned.

OLD ENGLISH/BLUE CHEESE BALL
This is an old recipe from my childhood.

2 pkgs (8-oz each) cream cheese
2 jars (5-oz each) Old English Cheese Spread
1 jar (5-oz) Blue Cheese
3 tbsp red wine vinegar
1/8 tsp garlic salt
chopped pecans for rolling the balls in

Let cheeses warm to room temperature for easier mixing.

Put all ingredients, except pecans, into a mixing bowl and blend with a fork until well blended. After mixing, refrigerate the mixture until it is stiff. Remove from refrigerator and divide into two equal parts. Roll each part into a ball. Roll each ball in the chopped pecans. Wrap in plastic wrap and refrigerate until ready to serve. Serve with an assortment of crackers and/or fresh vegetables.

ZUCCHINI APPETIZERS
This is an old Southern Indiana recipe.

3 cup shredded zucchini
1 cup Bisquick
1/2 cup chopped onion
1/2 cup Parmesan cheese
1/2 tsp salt
1 tsp oregano
dash of black pepper
1 clove of garlic, minced
1/2 cup oil
4 eggs, beaten

Mix all ingredients together in a large bowl. Spread mixture in a 9 X 13-inch baking pan that has been lightly greased. Bake at 325 degrees for 25 minutes or until golden brown. Cut into squares then cut each square in half diagonally.

Note: These squares freeze well.

Production-oriented agriculturalists argue that environmental protection–especially protection of forests and topsoil–can be advanced through modern, input-intensive farming. Environmental advocates, by contrast, associate high-input farming with chemical pollution, a faster exhaustion of water supplies, and a dangerous loss of biodiversity.


Production is now concentrated in California and the Carolinas, but after 12 years of research to develop culturing techniques, Kohler and zoologist Robert Sheehan believe the fish is ideal for cultivation in southern Illinois.


Production and cultivation are central in this innovative concept. While some canopy items might simply be collected and harvested, the cultivation of selected species offers the best opportunities for utilisation on a sustainable basis.


Growers often till the land as many as 3-6 times during a growing season to “eradicate” weeds and prevent reseeding before they start farming organically — a “deal with it now and not worry about it in future” approach. This practice results in high levels of soil erosion and subsequent loss of organic matter from the fragile Florida soils. Growing food accounts for only one fifth of this. The other four fifths is used to move, process, package, sell, and store food after it leaves the farm.

London?S Food And Drink Industry

Food and drink is the second largest manufacturing sector in London. It is also the manufacturing sector which has performed the best in the capital over the last five years. West London Business says that 10 per cent of all London jobs are linked to the food and drink sector in some way.

According to a mapping study of the capital’s food and drink production industry funded by the European Union, there are 870 businesses in London’s food and drink supply chain with a total estimated turnover of £3.3 billion. The same research also suggested that 94 per cent of the businesses in the sector are small and medium-sized enterprises with a turnover of less than £1 million each.

There are thousands of restaurants in the capital and thousands of food and drink outlets. West London Business estimates that eating out contributes £8 billion a year to London’s economy.

Different parts of London are famous for different kinds of food and drink.

West London has been a magnet for businesses in the food and drink sector for 80 years. According to West London Business, the local chamber of commerce, the sector employs 15,000 people in the area. There are 140 businesses involved in the food industry on the Park Royal Industrial Estate alone, employing 6,000 people. One of these is the recently opened Park Royal Food Innovation Centre, which supports the development of London’s small and medium-sized food and drink enterprises.

Sugar production has a long tradition in East London. Today, Tate & Lyle, with its Silvertown works, is the only cane sugar refiner in the UK. East London also has a strong brewing tradition. The Black Eagle brewery at 91 Brick Lane produced beer until 1989, the Albion brewery until 1959 and the Anchor Brewery in Mile End road until 1975. These days, East London is better known for its curry restaurants, particularly along Brick Lane.

North London is the chosen location for many small businesses active in food and drink processing. Enfield provides the home for London’s only flour mill, G. R. Wright & Sons, at Ponders End. North London Business, the local chamber of commerce, helps small and medium-sized enterprises in the area to network, meet new contacts and do business with each other through North London Food Linx.

South London is the base for a number of innovative businesses, such as Lambeth-based Today Was Fun, a supplier of organic teas. The company, founded by Sharyn Wortman, increased its international sales approximately ten-fold between 2005 and the end of 2007 and won the Best Newcomer award in UK Trade & Investment’s 2008 London Passport to Export Awards.

London Mayor Boris Johnson recently called on food businesses in London to step up efforts to reduce their carbon footprint. This followed the publication of a report commissioned by the Greater London Authority and the London Development Agency that found Londoners’ eating habits to be responsible for more greenhouse gases each year than the entire national output of Estonia.

The sector is responding. The vast majority of London’s food and drink production companies service local retailers and food services. Only a small proportion supply national retailers. One ‘green’ food business is Lambeth-based Today Was Fun, whose green tea was the first carbon neutral tea.
