Truffle hunters or truffle farmers use trained pigs or dogs to locate the truffles that may be underground and ready to be taken carefully out. Truffles are not easy to cultivate and although farmers and scientists have managed through the last thirty years to improve the ability to grow truffles there is still not a full guarantee of growth. Truffles can take six or more years to mature before it can be seen if truffles are growing or not. When truffles are ready to harvest the process is very methodical, slow, and labor intensive. These facts about truffles make them one of the most expensive delicacies in the world.

After truffles are methodically harvested, truffles should be placed in paper bags with appropriate markings on the bag to differentiate the varieties that were harvested. This is especially important for truffle hunters to do because an expert will be needed to ensure they are edible.

Truffles can last for several days in a paper bag placed in a refrigerator. One should not place truffles in a plastic container because the lack of air from a sealed container is bad for them. A second way to keep truffles is to place them in a jar then in the freezer where they can last for several months. A third way truffles can be preserved is to put them in oil. However, if there is no pasteurization the shelf life of truffles at room temperature will be limited. A fourth way to store truffles is to put them in rice, but all the flavor of the truffles will be absorbed by the rice. The ideal way to use truffles is to consume them as soon as possible as fresh as possible.

When truffles are used in cooking they are generally eaten raw or are very lightly cooked because the flavor compounds of the truffle are highly unpredictable. Here are a few guidelines for using truffles in dishes.

First: The truffle should not to be used with other foods with strong flavors and overwhelming aromas. The flavors can clash so it is better to use truffles to flavor bland foods like pasta, rice, and potatoes.

Second: Fat is good for the truffle. Fat helps bring out the full flavor of the truffle, which is why they are paired with butter, cheese, and oils.

Third: One should maximize the flavor of the truffle by shaving, slivering, or slicing it. Anything more and the diner will not get the most taste from the truffle.

Fourth: Save the peel from a truffle. Do not throw away because the peel can add flavor to other recipes including sauces.

The problem with all this plastic is that it is made with chemicals. Chemicals that can leach into our beverages and our food. Chemicals that end up in our bodies, where it accumulates and causes health problems. Chemicals that end up in our unborn children.

Some of the suspected health hazards include reproductive defects, premature delivery (which are up 23% since 1980), lowered sperm counts (these are down 40% since 1945), and early onset puberty. As part of a program to bring her health back to where it should be, one woman who was interviewed for this article said that she was told by her Naturopath to get rid of plastic containers.

Two of the most common “bad boys” of the plastic industry are PVC (polyvinyl chloride – a hard plastic) and phthalates, a group of substances added to PVC to make it softer and more pliable. In fact, phthalates are among the most common contaminants found in the human body. Another common chemical found in the kitchen is bisphenol-A, which is the main ingredient in hard plastic used in baby bottles, drinking water bottles, and plastic storage containers. Bisphenol-A is in the list of the top 50 chemicals, measured by production volume.

Here are some steps that you can take to decrease your family’s exposure to these chemicals.

- never heat foods or beverages in plastic containers; it is so easy to put a “microwaveable” plastic container into the microwave; don’t do it

- avoid plastic cling wrap products; most have phthalates in them

- avoid containers with PVC in them; if there is a “3” in the recycling triangle, get rid of it

- use glass or stainless steel drinking containers

- use ceramic or enamel plates

- use metal feeding utensils and metal kitchen tools

- do not store food or beverages in plastic containers, especially if the food item is acidic

- if you must use plastic, do not wash it in a dishwasher or use harsh detergents on it

It is interesting to note that in 2005 the European Union banned some commonly used chemicals of the phthalate family from use in toys. One commissioner was quoted as saying, “Toxic chemicals have no place in children’s toys”. Yet we continue to allow them in our food and beverage containers.

In North America, San Francisco instituted a ban in December 2006, although implementation has been delayed by a law suit. The ban covers biphenol-A and certain phthalates. This is commendable, but society needs more than city wide bans.

All our kitchens are full of plastics. From plastic utensils, plastic plates, plastic cups, plastic containers, plastic wrap and more, they have become an indispensible part of our life. Even our appliances have many plastic parts.

Every bit of these plastics are made with chemicals, and these chemicals are leaching out into our food and into our drinks. These chemicals are winding up in our bodies where they accumulated and are implicated in many of our modern health problems. These chemicals are also being detected in our unborn children.

Two of the worst offenders as far as chemicals found in plastics are PVC (polyvinyl chloride). The PVC pipes that carry your water are an example of this hard type plastic. Phthalates are chemicals that are added to the PVC to make it soft and pliable. These phthalates are the most common toxic substance found in the body.

Also commonly found lurking in our kitchens is a chemical called bisphenol-A, which is found in hard plastics such as baby bottles, drinking water bottles, and our ever popular storage containers. bisphenol-A or BPA is one of the top 50 chemicals produced today. It is found everywhere!

Here are some tips on how to reduce your exposure to the toxic chemicals found in plastics.
1. Foods should never be heated in plastic container. Even though they are labeled “microwave safe”.

2. Eliminate of severely reduce the amount of plastic wrap that you use. Most of these products contain phthalates.

3. Any container that has the “3” in the recycling triangle on the bottom should be eliminated from your kitchen.

4. Switch to glass or stainless steel drinking containers instead of plastic.

5. Avoid the use of paper plates, plastic silverware and plastic cups.

6. Avoid plastic cooking utensils. Use metal instead. You shouldn’t be using Teflon coated cookware, so the scratching issue is non arguable!

7. Use glass containers to store food, especially acidic foods.

8. Never wash plastics in a dishwasher or use harsh detergents on the plastic. Hand wash only.

In 3005, the European Union put a ban on using chemicals such as phthalates and others, in children’s toys. One of the commissioners of this Union, was quoted as saying “Toxic chemicals have no place in children’s toys”. So why in the world do we still allow these toxic plastics in our kitchens, food containers and drink containers?

In the United States, the City of San Francisco is attempting to ban bisphenol-A and some phthalates. A lawsuit is delaying the implementation of this ban. Even if this ban is put into law, more than city-wide bans are needed. It must be a global issue.

On the other hand, why do we need to wait until our governments wade through the red tape to get these toxic chemicals out of our lives? We can take measures ourselves to make our kitchens and homes plastic free.

It will only take a little effort on our part and a little thought to have a healthier, safer home.

However the excitement in any garden project is to pursue another avenue. In this case you can easily grow a bottle garden in any glass or plastic container.

You have numerous containers available at your finger tips in which to place and grow your plants. This includes a fishbowl,a large food canister,brandy snifter,glass jug or a pitcher. The only requirements are that it is both transparent and waterproof. If your container has no cover such as a cork or lid,you can easily stretch some plastic wrap across the top and trim the excess with a razor blade. This provides the ability of your bottle garden to trap moisture and create condensation and saves you, the bottle gardener, a lot of unnecessary watering.

The order of business in bottle gardening is to wash the chosen container with a solution of bleach and water to prevent the forming of molds and other fungi. Rinse and dry thoroughly you don’t want to be viewing your lovely plants through greasy marks,smears or fingerprints. I would allow the bottle to rest for a few minutes to half hour just to ensure that it is completely dry and clear of any marks. You can take a cloth and wrap around the base of the container and using both hands hold it up to the light to observe as much of the interior as possible. When your satisfied with your cleaning, then you are ready to proceed to the next step.

In order to fill your bottle garden to the proper level with growing material requires the use of a paper funnel. This makes it easy to fill your bottle without unnecessary dirt clinging to the sides. It is a simple process to roll up some butcher paper or sheets of newspaper into a funnel shape and poor your potting mix and drainage material through the funnel.

Now using your funnel and giving your garden bottle the layered look,I would start with some sphagnum moss,followed by a little fine gravel or even sand and mix it with a little horticultural charcoal available at your local garden shop. The next layer should include a sterile peat-based potting mix. You should plan to use about one-half inch of this potting mixture in a small garden bottle and two to three inches in your larger containers.

Okay so what should be planted in a bottle garden? There are two ways to approach this before purchasing your plants either you have the ability to or the area to have a cool garden bottle where the temperature goes no higher then 70 degrees or develop a warm bottle garden more suitable to tropical plants where the surrounding temperatures are at least 75 degrees. Some of the best plants in the cool group are evergreen seedlings,ferns,mosses,violets or wintergreen. In your tropical motif it would be best to plant begonias,bromeliads,dracaenas,sedums or crotons. Keep in mind all of these plants are of the miniature or small plants specifically produced for this type of environment.

The next order of business is to place whatever you have chosen into your bottle garden. It really requires some very simple items found in your own kitchen inventory. These tools will be sufficient for successful planting in both your narrow necked containers as well as your wide-mouth containers. Using a common ordinary fork,tape it to a stick to dig your planting holes. Curing your medical marijuana is the final process of all the hard work and labor you put into your growing process. Curing is the slow drying phase that follows the full, open air drying phase of harvest. Curing allows the moisture of the bud to disperse evenly around the bud and allows the bud to slowly dry out at an even rate which allows for maximum psychoactive THC. Curing also gives the bud a much smoother smoke and it will burn very evenly.

So how do you know when it is time to start curing? The best, easiest way to test this is to try to snap a branch of your drying buds. If the branch breaks and snaps, the bud is dry enough to start curing. If the stem bends, there is still too much moisture present in the plant and it will need to be dried more before starting the curing process.

Curing can be accomplished using a variety of containers, however the most popular are the glass canning jars with metal lids that have a rubber seal on them. This is because these jars completely seal the bud in and many growers prefer to use glass over plastic because they say that the plastic can leave undesirable flavors in the bud. However, if you have a large harvest, most likely you will need to use some type of plastic container in order to efficiently cure your harvest.

The process of curing itself simply involves sealing your buds in the container as to allow the moisture to redistribute itself evenly among all the buds in the container, as well as within each bud itself. Some moisture will also be slowly leached into the air so you will want to open the lid to your container 3-6 times a day for 5-10 minutes. This will allow fresh air into the container and will allow the more humid stagnate air to escape. Continue this process for 2 days, or 2 weeks depending on how wet your bud is until it reaches a “dry” consistency that is preferred for smoking.

Special Note: It is not necessarily recommended to artificially speed along the curing process. This process gives the bud its final touch of flavor and adds an additional amount of psychoactivity to the remaining THC that can be hampered if the drying or curing process is rushed. It should be a goal to make the process take as long as it needs to, in order to ensure the maximum potential of your harvest. If you are in a time crunch, a faster curing method may be used, just be aware that the quality will be slightly lower than if you were to cure the bud at it’s more natural rate.
